About this Meal
Kitchiris are a high protein, nourishing, and easily digestible meal in Ayurvedic cooking made with mung beans and brown basmati rice. This autumn version is perfect for the shorter days and harvest time, featuring red potatoes, carrots and sugar snap peas, as well as ginger, turmeric, cumin, coconut, fennel seed, ground celery seed and toasted sesame oil. Toasted pepitas (pumpkin seeds) are on the side. Simple. Healthy. Delicious.

Brown basmati rice, mung beans, carrots, red potatoes, sugar snap peas, ginger, turmeric, coconut, fennel seed, ground celery seed, black pepper, cumin, sea salt, toasted sesame oil, lime juice, toasted pepitas.
